{"id":187,"date":"2026-02-21T16:53:06","date_gmt":"2026-02-21T16:53:06","guid":{"rendered":"https:\/\/thisimpliesthat.com\/recipes\/?p=187"},"modified":"2026-02-21T16:53:06","modified_gmt":"2026-02-21T16:53:06","slug":"mexican-rice","status":"publish","type":"post","link":"https:\/\/thisimpliesthat.com\/recipes\/mexican-rice\/","title":{"rendered":"Mexican Rice"},"content":{"rendered":"\n<h2>Ingredients<\/h2>\n\n\n\n<ul>\n<li>1 1\/2 cups long grain white rice<\/li>\n\n\n\n<li>1\/4 cup oil<\/li>\n\n\n\n<li>1 tsp minced garlic<\/li>\n\n\n\n<li>1\/4 cup tomato sauce, or 2 pureed fresh tomatoes<\/li>\n\n\n\n<li>2 tsp tomato bouillon (or substitute chicken bouillon if unavailable)<\/li>\n\n\n\n<li>1\/4 tsp salt<\/li>\n\n\n\n<li>1 carrot, diced<\/li>\n\n\n\n<li>1\/2 cup peas<\/li>\n\n\n\n<li>3 cups water<\/li>\n\n\n\n<li>1-3 whole serrano peppers<\/li>\n<\/ul>\n\n\n\n<h2>Instructions<\/h2>\n\n\n\n<ol>\n<li>Rinse the rice in a fine mesh strainer until the water runs clear, then set aside.<\/li>\n\n\n\n<li>Heat the oil in a large saucepan over medium-high heat. Add the rice, stir, then cook over medium heat, stirring frequently, until the rice is lightly golden brown.<\/li>\n\n\n\n<li>Add tomato sauce and garlic to the pan. Stir.<\/li>\n\n\n\n<li>Add bouillon, salt, carrot, peas, water, and serrano peppers. Bring to a boil then cover and reduce heat to low.
